Enriching your practice starts with your mind, connects with your soul and ends with your body. With that said, we love discovering yummy recipes to fuel a healthy and happy lifestyle.

With 2015 just around the corner, we're spreading holiday cheer every way we know how. Tis' the season for gingerbread, scarves and sequins, toasty fires, peppermint and cozy pajamas-- who's with us? Although we'd love to be elbows deep in gingerbread cookie-dough, we've decided to take the healthier route (our abs will thank us later). This homemade gingerbread granola from Acordingtoelle.com is the best of both worlds-- sugar, spice, healthy and nice. 

Healthy Eats: Homemade Gingerbread Granola

 

 Ingredients

  • 5 cups old-fashioned rolled oats (about 1, 18-ounce container)
  • 1 3/4 cups raw pecans and/or walnuts
  • 3/4 cup coconut flakes
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon fine-grain sea salt
  • 1/4 cup maple syrup
  • 1/2 cup molasses
  • 3 tablespoons melted coconut oil (or canola oil)
  • 1/4 cup finely chopped candied ginger or 2/3 cup raisins (optional)
